I'm interested in finding out about the number of "business" books
sold in the UK per year.

Also what is the average profit on books sold in the UK (cost to the
retailer less RRP)

The average markup in a mainstream bestseller is around the 50 - 66%
mark, but most books operate at somewhere between a 25 - 33% markup.
