which CD has the song, "the miller and the brook", a piano rendition
which I have heard several times on station WQCS in Ft Pierce, FL. 
I'm pretty sure it's one of Schubert's lieder.

Your are absolutely right, this is a piece by the Austrian composer
Franz Schubert, better known under its orginal German title "Der
Müller und der Bach" (which means exactly the same). It is part of the
song cycle "Die schöne Müllerin" and included on a number of CDs
