If I build a user generated content website from scratch and I want to
turn it into a business, what kinds of IP protection do I need?

What if I don't do it from scratch and I build it on an open source platform?

Do you mean IP protection like you're logging the users ips? you can
use md5 encryption via php. The ip's can't be decrypted, there is no
such function.
