The name Galyon does not show up with that exact spelling in any of
the Scottish or Irish surname records where one would expect it to
show up.  However, there are some relatively uncommon sound-alike
names that may well be part of your family history.
First place I checked was the Ellis Island database, which can be
effectively searched at the JewishGen site:

A search on the exact spelling, GALYON, turns up only a very small
number of hits, none from Scotland or Ireland (in fact, Hungary is the
only foreign country named).
However, a search with the [ sounds like (many) ] box checked, and the
Scottish and Irish boxes checked in the [ Ethnicity ] selections,
turns up a number of close matches:

and, again, there are no GALYON's from Scotland or Ireland, based on
the exact spelling.
But with the 'exact spelling' option unchecked, a search for names
from Scotland and then, separately, from Ireland, turn up a number of
possibilities, including a GALLYON surname.

aware of.  But I did check two others, one specific to Scotland:

A search on GALYON does not return ANY results in Scotland.  However,
there are numerous results for the alternative spellings shown above.

a search on GALYON produces no results, but suggests Gillan or Gillen
as as possible alternatives.

I'd say it is rather unlikely that your ancestors, if they hailed from
Scotland or Ireland, would have spelled their surname as you spell it
today, but they may well have used one of the very similar variations
listed above.
