I am interested in the modification of gelatin so that it can either:
Dissolve in cold water at temps of 20°C
or
Not flocculate in cold water so that it remains dispersible.
Is there a gelatin on the market with these properties? (NB, I am
aware of patents on cold water soluble gelatin, however these have
proven  unsuitable).
Or is there a method for modifying gelatin so that it can fulfil the above criteria?
