  godirect.co.uk/mortgages/buy-to-let-mortgage 
or
  godirect.co.uk/mortgages/buy_to_let_mortgage 

or can anyone think of a better way for seo purposes?

The first, with dashes, would be the better URL for your purposes.

The easy answer is :
dash will always work, use underscore at your own risk
