Where can I find a company that would cut a piece of granite (or other
stone) into the shape of Texas? I'm looing for something about 2'x 2'
to hang over a
fireplace.

In order to get the best answer for you, could you please clarify a few points?

1) How thick did you want this piece of granite/stone to be? 
2) Do you require it to be ready to hang, with hardware, etc. in place?
3) Will you need to have it shipped to you, or did you want a local
company? If the latter, how far are you willing to travel?
4) Either way, where are you located? Please don't give your address,
just city or area, state, and/or country will be fine.
5) Do you have a budget and, if so, what is your price range?
6) How many sources will you consider an adequate answer?

There are often stone cutters near larger cemeteries.  I suggest
checking your yellow pages and asking around.  The size piece you want
may be something one has on his scrap pile.  If you can't find stone
cutters or masons in the yellow pages,  look for cemeteries,
headstones, ask an undertaker.

Once you have found someone, be sure to discuss in detail just what
you want:  look at samples of his work to agree on finish, how
detailed the coastline should be, if maybe you want the edges to slope
inward on the reverse side, etc., etc.
If you don't know and specify exactly what you envisage, you will get
what he envisages  - maybe nice, but maybe not what you were thinking
about.
