I want the recipe for an unsweetened vegetable cake.  Similar to a
normal cake, but made with vegetables.  I would suggest looking for
Sweet Potato or Zucchini cakes for starters.

If you know more about baking than me (which is probably likely),
perhaps you can provide a sweetened recipe that I could leave the
sweetener out of without affecting the texture of a the "cake".

In summary, I'm looking for...
1. A recipe of an cake that is not sweetened (with
sugar/syrup/artificial sweetener) or instructions on not sweetening it
2. It must contain vegetables (fruits are ok)
3. It must look/feel like a "cake"
4. Bonus points for multiple recipes/options

    I have sifted through numerous recipe sites to compile the following list:

Chocolate, Zucchini, Sweet Potato Cake
======================================

1/4 cup cocoa 
2 1/2 cups flour 
1/2 cup rye flour or buckwheat flour 
1 teaspoon salt 
1 teaspoon baking soda 
1 teaspoon baking powder 
1 1/2 teaspoons cinnamon 
3 eggs 
1 cup vegetable oil  
1 1/2 cups brown sugar 
1/2 cup honey 
2 teaspoons vanilla 
1/2 cup buttermilk 
1 cup grated zucchini 
1 cup grated sweet potatoes 
1 cup dried cherries, hydrated in 3 tablespoons rum or hot water 
1 cup pecans, roughly chopped (optional)

Decrease the oil by ½ cup, omit the sugar and honey. Try using chopped
jarred maraschino cherries for more moisture.
?  Preheat oven to 350 degrees. 
?  Butter and flour a bundt pan. 
?  Sift together first 7 ingredients. 
?  Set aside. 
?  In a mixer mix oil, sugar, honey add eggs and vanilla. 
?  Mix dry ingredients into egg mixture then add buttermilk. 
?  Stir in remaining ingredients. 
?  Pour into pan and bake for 50-60 minutes till toothpick comes out clean. 
?  Let cool. 
?  Invert onto cake dish.

2 cups raisins
2 cups water
1 cup unsweetened applesauce
2 eggs, beaten
2 tablespoons liquid artificial sweetener
3\4 cup vegetable oil
1 teaspoon baking soda
2 cups all-purpose flour
1-1\2 teaspoons ground cinnamon
1\2 teaspoon ground nutmeg
1 teaspoon vanilla extract
Light whipped topping, optional
In a saucepan, cook raisins in water until water evaporates. Add
applesauce, eggs, sweetener and oil; mix well. Blend in baking soda
and flour. Stir in cinnamon, nutmeg and vanilla. Pour into a 8-inch
square baking pan coated with nonstick cooking spray. Bake at 350
degrees for 25 minutes or until cake tests done. Garnish with whipped
topping if desired. Nutritional Information: Serving size: 1 piece
calories: 181 Sodium: 18 mg. Cholesterol: 10 mg. Carbohydrates: 24

Carrot Cake

   This carrot cake calls for honey, but you can substitute a cup of
unsweetened applesauce. I?ve substituted applesauce in other recipes
and it works great!
Organic carrot cake 
4 organic eggs 
1 cup organic honey 
1 cup safflower oil 
2 cups organic, unbleached all-purpose flour 
2 teaspoons baking soda 
2 teaspoons baking powder 
2 teaspoons ground cinnamon 
1 1/2 teaspoons ground nutmeg 
3 cups grated organic raw carrots 
1 can (8 ounces) crushed pineapple, drained 
1 cup organic raisins (golden or dark) 
1 cup chopped organic walnuts 
1 cup shredded, organic, unsweetened coconut 

PREPARATION: In mixing bowl, beat eggs. Add honey; beat until light
and fluffy. Add oil; mix well. Add flour, baking soda, baking powder,
cinnamon and nutmeg; beat until smooth.
Stir in carrots, drained pineapple, raisins, walnuts and coconut; blend well. 
Pour batter into greased 9-by-13-inch pan or three 8-inch round cake
pans. Bake at 325 degrees for 40-45 minutes, or until cake tests done.
Cool on rack.

I?ve omitted the frosting  recipe as it contains sugar. You can find
it if you like, on the web page.

Here is another low-sugar carrot cake. I would expect that by omitting
 the 6 tbs. of sugar would not affect the consistency much, if at all.

CARROT CAKE (LOW-SUGAR)

1 1/2 c. all-purpose flour
1/4 c. whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. salt
1/2 c. vegetable oil
6 tbsp. sugar
2 eggs
1/4 c. unsweetened pineapple juice concentrate
1 tsp. vanilla
1 c. shredded carrots
1/2 c. golden raisins
1/2 c. crushed unsweetened pineapple, drained
Preheat oven to 350 degrees. Grease and flour 9x5x3 inch pan.
In a bowl, toss dry ingredients. In second bowl, stir oil, sugar,
eggs, juice and vanilla. Stir liquid into dry ingredients until
smooth. Stir in carrots, raisins and pineapple. Scrape into prepared
pan. Bake 35-40 minutes. Cool in pan on rack, 1 hour.

Omit the packets of artificial sweetener

INGREDIENTS:
?	1 cup chopped golden raisins
?	1/2 teaspoon salt
?	1 1/2 cups chopped walnuts
?	1 cup chopped cranberries
?	1 cup unsweetened crushed pineapple
?	1/4 cup grated lemon peel
?	1 cup flaked coconut
?	1/3 cup orange juice
?	8 packets artificial sweetener
?	1 teaspoon ground mace
?	1 teaspoon ground allspice
?	1 teaspoon baking soda
?	1 1/2 cups all-purpose flour
 
DIRECTIONS:
1.	Mix sugar substitute with orange juice. Pour over chopped
cranberries. Soak 1 hour, mixing often.
2.	Mix raisins, nuts, coconut, lemon rind in flour until well coated.
Add cranberries and orange juice mixture. Sprinkle baking soda over
mixture, and mix. Mix in spices. Fold in crushed pineapple. Pour
batter into a greased and floured 9 inch loaf pan.
3.	Bake at 325 degrees F (165 degrees C) for 40 minutes. Cool.

1 c. dates
1 orange with about 1/2 of the peeling
Put in a blender and blend well. Add 1 cup buttermilk and 1 egg. Blend
a little more. Add 2 tablespoons melted shortening. 1/2 tsp. nutmeg
1/2 tsp. cloves 2 tsp. soda 1/2 tsp. cinnamon 1/2 tsp. salt
Mix dry ingredients and add to fruit mixture. Add 1 teaspoon vanilla.
Put in a 9 x 13 inch pan. Bake 20-25 minutes at 350 degrees.

Pulp from 1 orange
1 egg
1 c. milk
2 tbsp. shortening
1 tsp. vanilla

Mix the fruits, egg, milk, shortening and vanilla together in a large
bowl. Sift together the dry ingredients and add to the fruit mixture.
Pour into a 9x13 pan and bake for about 30 minutes at 350 degrees.

30-35 minutes

Ingredients:
?	1 3/4 c Flour
?	1/2 ts Salt (opt)
?	1 tb Baking powder

Instructions:

Toss blueberries in a large mixing bowl.  Sift together the flour,
salt, baking powder, cinnamon and nutmeg. Preheat oven to 400 F. In a
small bowl beat eggs lightly, add the oil, orange juice, and grated
rind and add this mixture to the flour mixture. Before the flour and
liquid ingredients are fully combined fold in the blueberries,
stirring gently. Fill 12 or more well greased muffin tins about 2/3
full with the batter. Bake the muffins for 20-25 minutes. From

Another idea is to make biscuits (sugarless) and slice strawberries over them!
