A few years ago, some credit cards would let you generate numbers for
one-time use at online sites. Are any credit card providers still
doing that?

Yes, that is the kind of service I have in mind. I have heard that
Paypal may offer something similar. Is there a list of these services?

I'm not aware of a current list. Some of these services (such as the
one formerly operated by American Express) have been discontinued.
