pdq2,
Thank you for accepting my resources for your Answer.
The first is the book
Adobe Photoshop Elements 4.0 A to Z: Tools and features illustrated
ready reference (Paperback) by Philip Andrews (ISBN 0240520173)
This 224-page book was released in March 2006 and costs $16.47 on Amazon.

I was able to determine that it covers both Windows and Macintosh by
doing "Search Within This Book" on Amazon, which revealed numerous
references describing Macintosh keystroke combinations. However, since
the two versions are very different, I am not able to judge how
helpful this book might be for Mac users.

It does not appear that this book includes a tutorial CD.
In my opinion, a much better source for you would be Atomic Learning's
Macintosh Tutorials for Photoshop Elements 4.

At the top of this page, Atomic Learning provides links to allow you
to view a couple of sample videos, so you can get an idea of whether
you feel that their tutorials will work for you.
Atomic Learning appears to be a company with an excellent reputation
for its tutorials, but their program is not inexpensive: a one-year
subscription costs $79.99.

However, a subscription will entitle you to access ALL of their
tutorials, and, as you can see from this page, there is a large
selection of Macintosh-specific tutorials for numerous different
software packages, as well as training and Tips and Tricks for the Mac
OS X system.

I would caution that many online subscription-based companies will
automatically renew your subscription at the end of the year by
charging your credit card, unless you notify them that you are
cancelling (although they are supposed to notify you before they
actually charge your card). So if you opt to join Atomic Learning, you
may want to obtain a one-use number from your credit card company if
it offers that option. Otherwise, you will want to put a reminder to
yourself in your day planner or online calendar.
Adobe itself provides a couple of tutorials for free:
Putting together a picture package
Fixing photos taken on camera phones

About.com also has some links to additional Macintosh-specific tutorials:
