I read in a Flying magazine in the past year, I think, an article that
quoted an aviation poem that said something like, "I must return to
the air, for that is where my heart remains (after flight)"... I know
my paraphrase is wrong, but I'd like to find that original poem if
anyone can help.

That might be it. I'll take it. I thought the poem said something
about that's where the person's heart remains, but I could be wrong.

Here's how I found the poem: 

Your description of the poem that you were seeking reminded me of John
Masefield's famous poem, "Sea-Fever," which you can read here:

It occurred to me that if I were using "Sea-Fever" as an inspiration
for a poem about flying, I might use the title "Sky Fever." So, on a
hunch, I used Google to search for poems by that name, and the "Great
Aviation Quotes" site came up first:
