I would like to find practice quizzes for the following stories: "The
Bet" by Anton Chekhov, "The Pit and the Pendulum" by Edgar Allen Poe,
and "Everday Use" by Alice Walker.

I have a number of quizzes for all three of these, but I don't know
exactly what you mean by "practice quizzes."

How many questions do you need for each short story?
What is your objective: to see if the story was read, or to see if it
was understood?

To answer your question.  I am more interested in reading comprehension.  I
think 10 to 15 questions per short story will be good.

Sorry to clarify once again, you want 15 questions on each story along
the lines of for example;

The Bet - Chechov

1.Trace the lawyer's sequence of interests while imprisoned.  What
does it say about his character is changing over the course of time?

Is that the kind of thing you want ?

Well, I have looked around the web, and I have not found good reading
comprehension questions for the short stories you want. Because I have
taught these short stories many times in the past, I know what would
be good questions, and I have sets of questions in my files. But I
would be unwilling to "sell" them to you for $6, and I am not sure the
folks at Google want me to start using this service to sell my own
products.
