Hello.

A basic gyro on pita has around 43 grams of carbohydrates. However, a
pita has 42 grams of carbohydrates.
  
Nutritional information for Middle Eastern & Lebanese Foods:
Gyro, 4 oz beef & lamb on pita bread w/4 tbsp tzatziki sauce 
43 g carbs

Does it make sense that the meat filling of Gyro would only have 1
gram of carbohydrates?

Actually, yes. Generally speaking, meat has no carbohydrates.

Notice that web page "Carbohydrate Counts of Common Foods" indicates
that lamb has 0.00 carbohydrates.

Any carbs in the meat filling of a gyro would have to come from the
other ingredients such as onions.

Notice that the gyro filling is mostly meat with only a tiny amount of
seasoning.  Ingredients:
ground lamb
chopped onion
garlic
salt 
marjoram
rosemary
black pepper

Of these, only onions would have significant carbs.  One whole of
cooked, chopped onions might have some carbohydrates (e.g., 21 grams;

since one gyro would have only a tiny fraction of a cup of onions, the
carbohydrates will not be significant.

Based on some internet browsing, I do notice that a few gyro recipes
contain tomatoes.  If you're eating a gyro that contains tomatoes,
you're going to get some additional carbs, though probably not many.
