I received a summons while visiting NYC for an open container which I
pled not guilty too.  I live in NH and cannot get off work on my court
date.  Also, I cannot afford to have an attorney present in my place. 
At this point I would rather change my plea and pay by mail.  Is this
possible? I'm also
wondering if I don't show up will they really issue a warrant for my
arrest?

As to the second part, rest assured that if you do nothing and don't
show up to court on your court date, the court will issue a warrant.
